Lamb Madeira

Ingredients

- 2 tablespoons butter or 2 tablespoons margarine
- 4 ounces fresh mushrooms or 1 (4 ounce) can sliced mushrooms
- 1/2 cup sliced green onion, use and green
- 1 lb lamb tenderloin steak, cut around 3/4-inch thick
- 1/4 cup madeira wine (i use the broth) or 1/4 cup beef broth (i use the broth)
- 1 tablespoon worcestershire sauce
- 1 tablespoon cornstarch
- salt and pepper
Recipe
- 1 melt butter in large skillet over medium heat.
- 2 add mushrooms and green onions, cook 2-3 minutes until tender. season meat with salt and pepper; add to skillet and cook until browned; turning once.
- 3 pour in wine or broth, 1/4 c water and worcestershire sauce.
- 4 reduce heat and simmer until lamb is tender, about 10 minutes remove lamb to platter.
- 5 dissolve cornstarch in 1t water; stir into sauce in skillet. increase heat to med. and stir until thickened, about 3 minutes pour over lamb and serve.
