Lamb Madeira

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 tablespoons butter or 2 tablespoons margarine
  • 4 ounces fresh mushrooms or 1 (4 ounce) can sliced mushrooms
  • 1/2 cup sliced green onion, use and green
  • 1 lb lamb tenderloin steak, cut around 3/4-inch thick
  • 1/4 cup madeira wine (i use the broth) or 1/4 cup beef broth (i use the broth)
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon cornstarch
  • salt and pepper

Recipe

  • 1 melt butter in large skillet over medium heat.
  • 2 add mushrooms and green onions, cook 2-3 minutes until tender. season meat with salt and pepper; add to skillet and cook until browned; turning once.
  • 3 pour in wine or broth, 1/4 c water and worcestershire sauce.
  • 4 reduce heat and simmer until lamb is tender, about 10 minutes remove lamb to platter.
  • 5 dissolve cornstarch in 1t water; stir into sauce in skillet. increase heat to med. and stir until thickened, about 3 minutes pour over lamb and serve.
