Provencal Steak And Veggies

Ingredients
- Servings: 4
- 1 tablespoon vegetable oil
- 1 (1 lb) beef sirloin steak, cut into 1 inch cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 yellow squash, cut unto 1 inch chunks
- 1 (15 ounce) can great northern beans, rinsed and drained
- 1 (14 1/2 ounce) can diced tomatoes
- 1/4 teaspoon black pepper
- 2 cups loosely packed fresh spinach leaves
- 1 tablespoon grated parmesan cheese (or more)
Recipe
- 1 in a large skillet, heat oil over high heat.
- 2 add steak, onion, and garlic.
- 3 saute 5 minutes, or until meat is browned, stirring frequently.
- 4 add yellow squash and saute 3 to 4 minutes, stirring frequently.
- 5 add beans, tomatoes, and black pepper, mix well.
- 6 cook 3 to 4 minutes, or until heated through.
- 7 just beore serving, stir in spinach and cook 2 to 3 minutes, or until spinach wilts.
- 8 sprinkle with paresan cheese and serve.
