Lamb Satay

Ingredients

  • Servings: 2
  • 1/2 lb boneless lamb (lean)
  • 2 tablespoons soy sauce
  • 2 tablespoons steak sauce, thick
  • 10 apricots, dried
  • 1/4 cup peanut butter, chunky/smooth
  • 1/2 teaspoon salt
  • 5 hot pepper sauce, drops

Recipe

  • 1 cut the lamb into 3/4-inch cubes and combine with the soy sauce and steak sauce.
  • 2 cover and refrigerate for several hour, stirring occasionally.
  • 3 meanwhile, simmer the apricots in 3/4 c water for 5 minutes.
  • 4 place the apricots and their cooking liquid in a blender container or food processor.
  • 5 add peanut butter, salt, and hot pepper sauce.
  • 6 cover and process until smooth.
  • 7 reheat when ready to serve.
  • 8 thread the marinated lamb cubes on skewers. (if you use wooden skewers, soak them in water 2 hours before using.) brush with remaining soy sauce mixture.
  • 9 cook over hot coals or under broiler for 6 to 8 minutes, turning often.
  • 10 serve with the warm apricot-peanut butter sauce for dipping.
  • 11 note:
  • 12 double the meat portion of the recipe for 4 people.
  • 13 if you like, serve kabobs of mushrooms along with the lamb.
  • 14 thread small fresh mushrooms on separate skewers, brush with melted butter and grill or broil along with the lamb.
