Ingredients

- 3 tablespoons olive oil
- 1/4 lb pancetta (chopped)
- 3 small onions (sliced very thin)
- 1/4 teaspoon salt
- 1/4 cup red wine vinegar
- 1 teaspoon sugar
- 1 dash cayenne
- 3 tablespoons olive oil
- 2 large tuna steaks
- 2 bay leaves (ground)
- salt & fresh ground pepper (to taste)
- 1/4 cup dry wine
Recipe
- 1 heat oil in a skillet.
- 2 add pancetta. brown well. remove with a slotted spoon. set aside.
- 3 reheat skillet.
- 4 add the onions. cook 5 minutes.
- 5 add the salt and vinegar. let evaporate.
- 6 stir in the sugar, cayenne and pancetta. keep warm.
- 7 heat oil in another skillet.
- 8 rub tuna with the bay leaves, salt and pepper.
- 9 sear 2 minutes each side.
- 10 add wine. cover. cook 30 seconds.
- 11 place on plates. top with onions.
