Pesce Mafia

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 3 tablespoons olive oil
  • 1/4 lb pancetta (chopped)
  • 3 small onions (sliced very thin)
  • 1/4 teaspoon salt
  • 1/4 cup red wine vinegar
  • 1 teaspoon sugar
  • 1 dash cayenne
  • 3 tablespoons olive oil
  • 2 large tuna steaks
  • 2 bay leaves (ground)
  • salt & fresh ground pepper (to taste)
  • 1/4 cup dry wine

Recipe

  • 1 heat oil in a skillet.
  • 2 add pancetta. brown well. remove with a slotted spoon. set aside.
  • 3 reheat skillet.
  • 4 add the onions. cook 5 minutes.
  • 5 add the salt and vinegar. let evaporate.
  • 6 stir in the sugar, cayenne and pancetta. keep warm.
  • 7 heat oil in another skillet.
  • 8 rub tuna with the bay leaves, salt and pepper.
  • 9 sear 2 minutes each side.
  • 10 add wine. cover. cook 30 seconds.
  • 11 place on plates. top with onions.
