Puff The Magic Salmon

Ingredients
- Servings: 6
- 6 salmon steaks, 3/4 inch thick
- 1 tablespoon lemon juice
- salt and pepper
- 2 egg whites
- 3/4 cup mayonnaise
- 1/2 cup finely shredded gruyere or 1/2 cup emmenthaler cheese, about 2 oz
- 1/4 cup chopped green onion
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill
- 1 pinch cayenne
Recipe
- 1 preheat broiler.
- 2 arrange salmon steaks on a greased broiler pan, sprinkle with lemon juice, salt and pepper.
- 3 broil 4-6 inches from heat, 6-8 minutes or until center is opaque.
- 4 meanwhile, beat egg whites until stiff but not dry.
- 5 fold in the remaining ingredients and spread mixture evenly over the fish.
- 6 broil until lightly browned.
