Hawaiian Lamb

Total Time: 1 hr 20 mins Preparation Time: 5 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • 2 cups crushed pineapple
  • 3 medium sweet potatoes
  • 2 tablespoons brown sugar
  • 4 lamb steaks (cut in half)
  • salt and pepper
  • 4 slices bacon

Recipe

  • 1 place pineapple in a large baking dish.
  • 2 peel and slice sweet potatoes.
  • 3 layer over pineapple and sprinkle with the brown sugar.
  • 4 sprinkle salt and pepper over lamb steaks and place over the sweet potatoes.
  • 5 arrange bacon strips on top of meat.
  • 6 cover casserole with foil and bake at 350° for about one hour, or till sweet potatoes and meat are tender.
  • 7 remove cover and turn temperature to 450° for the last 10 minutes of cooking till meat and bacon are browned.
