Easy Grilled Tuna

Ingredients

  • Servings: 2
  • 2 (6 ounce) tuna steaks, about 1 inch thick
  • 1 cup italian-style salad dressing

Recipe

    Preparation Time: 5 mins Cook Time: 5 mins Ready Time: 30 mins

  • place tuna steaks with italian dressing in a bowl, coating both sides; marinate in refrigerator for 20 minutes.
  • preheat outdoor grill for medium-high heat, and lightly oil the grate.
  • grill tuna on the preheated grill until tuna lightens in color but retains a thin line of pink in the center, about 5 minutes on each side.

German Rouladen

Ingredients

  • Servings: 6
  • 1 1/2 pounds flank steak
  • german stone ground mustard, to taste
  • 1/2 pound thick sliced bacon
  • 2 large onions, sliced
  • 1 (16 ounce) jar dill pickle slices
  • 2 tablespoons butter
  • 2 1/2 cups water
  • 1 cube beef bouillon

    Preparation Time: 20 mins Cook Time: 1 hr 10 mins

    Ready Time: 1 hr 30 mins

  • cut the flank steak into thin filets; about 1/4 inch thick and 3 inches wide.
  • generously spread one side of each filet with mustard to taste. place bacon, onions and pickle slices on each filet and form into a roll. use string or toothpicks to hold the roll together.
  • heat a skillet over medium heat and melt butter. place the rolls in the butter and saute until browned.
  • pour in 2 1/2 cups of water and add the bouillon cube; stirring to dissolve the bouillon cube. simmer the rolls for about an hour.

Lamb Chops With Balsamic Reduction

Ingredients

  • Servings: 4
  • 3/4 teaspoon dried rosemary
  • 1/4 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste
  • 4 lamb chops (3/4 inch thick)
  • 1 tablespoon olive oil
  • 1/4 cup minced shallots
  • 1/3 cup aged balsamic vinegar
  • 3/4 cup chicken broth
  • 1 tablespoon butter

    Preparation Time: 10 mins Cook Time: 15 mins Ready Time: 40 mins

  • in a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. rub this mixture onto the lamb chops on both sides. place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
  • heat olive oil in a large skillet over medium-high heat. place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. remove from the skillet, and keep warm on a serving platter.
  • add shallots to the skillet, and cook for a few minutes, just until browned. stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. if you don't, the sauce will be runny and not good. remove from heat, and stir in the butter. pour over the lamb chops, and serve.

Thai Beef

Ingredients

  • Servings: 6
  • 2 tablespoons coriander seeds, coarsely cracked
  • 1/2 cup firmly packed dark brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 pinch ground ginger
  • 1 1/2 pounds flank steak

    Preparation Time: 15 mins Cook Time: 5 mins Ready Time: 1 hr 40 mins

  • place flank steak in the freezer for 20 minutes.
  • whisk coriander, brown sugar, soy sauce, lime juice, garlic, and ground ginger together in a bowl until marinade is well combined.
  • remove steak from freezer and slice thinly across the grain. place steak in a large bowl, pour marinade over steak, and toss to coat. cover bowl and marinate at room temperature for 1 hour.
  • set oven rack about 6 inches from the heat source and preheat the oven's broiler. line bottom of a broiler pan with foil.
  • lay steak slices in a single layer on the rack of the prepared broiler pan.
  • cook in the preheated broiler, brushing occasionally with marinade, until steak reaches desired doneness, 1 to 2 minutes for medium rare.

Fun Karnal (beef And Broccoli)

Ingredients

  • Servings: 4
  • 2 1 1/2-inch-thick new york strip steaks, cut into 1-inch pieces
  • 2 teaspoons dried minced onion
  • 1/4 teaspoon minced garlic
  • 1 tablespoon soy sauce (optional)
  • 2 cups rice
  • 4 cups water
  • 2 tablespoons vegetable oil
  • 1/2 cup canned sliced bamboo shoots, drained
  • 1/2 cup canned sliced mushrooms, drained (optional)
  • 1/4 cup chopped green onion
  • 1/2 green bell pepper, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 tablespoons soy sauce
  • 1 cup broccoli florets
  • 1/4 cup sugar snap peas (optional)
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 1/2 (10 fluid ounce) bottle oyster sauce
  • 1/4 cup chopped green onion

  • place steak in a bowl; top with minced onion, garlic, and 1 tablespoon soy sauce. stir to coat.
  • bring rice and 4 cups water to a boil in a saucepan over high heat. reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • heat vegetable oil in a skillet over medium heat; cook and stir bamboo shoots, mushrooms, 1/4 cup green onion, green bell pepper, red pepper flakes, and 3 tablespoons soy sauce in the hot oil until green bell pepper is slightly tender, 4 to 5 minutes. add steak, broccoli, and sugar snap peas; cook until beef is browned and no longer pink in the center, about 10 minutes.
  • whisk cornstarch and 2 tablespoons water together in a bowl until cornstarch is dissolved. heat oyster sauce in a saucepan over medium-low heat; slowly stir in cornstarch mixture until sauce is thickened, 3 to 5 minutes. stir oyster sauce mixture into steak mixture; sprinkle with 1/4 cup green onions. cook steak mixture until sauce is thickened, 7 to 8 minutes. serve over rice.

Smothered Filet Mignon

Ingredients

  • Servings: 4
  • 4 (6 ounce) filet mignon steaks
  • seasoned salt to taste
  • cracked black pepper to taste
  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon dijon mustard
  • 2 teaspoons dried rosemary
  • 1 tablespoon butter
  • 2 cups onion slices
  • 1 teaspoon sugar
  • 4 ounces blue cheese, crumbled

  • season steaks with seasoned salt and black pepper, and arrange in a single layer in a large baking dish. in a bowl, whisk together olive oil, balsamic vinegar, mustard, and rosemary. pour mixture over filets, and turn to coat. marinate for up to 30 minutes.
  • while you are marinating the meat, melt the butter in a skillet over medium heat. cook onion slices in butter until soft, then stir in sugar. continue cooking until onions are caramelized. set aside.
  • preheat grill for high heat on one side, and medium heat on the other side.
  • lightly oil the grill grate. place steaks on the hot side of the grill, and cook for 10 minutes, turning once. when the steaks are almost done, move to the cooler side of the grill. top each filet with a quarter of the caramelized onions and blue cheese. close the lid, and continue cooking until the cheese is melted.

Wiener Schnitzel

  • 2 pounds veal
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 tablespoon vegetable oil
  • salt and pepper to taste
  • 4 cups bread crumbs
  • 1/8 cup oil for frying

  • cut the veal into steaks, about as thick as your finger. dredge in flour. in a shallow dish, beat the eggs with 1 tablespoon oil, salt and pepper. coat the veal with egg mixture, then with bread crumbs.
  • heat 1/4 cup oil in a heavy skillet over medium heat. fry veal until golden brown, about 5 minutes on each side.
