Nat's Easy Peppery Beef Broccoli Stir Fry

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 3
  • 1 1/2 lbs top sirloin steaks (partly frozen for easy cutting)
  • 1 head broccoli
  • 1/2 sweet onion
  • 1 (8 ounce) package mushrooms
  • 1/4 cup hoisin sauce
  • 1/4 cup soya sauce
  • 2 teaspoons steak spice
  • 2 teaspoons cornstarch
  • 2 tablespoons grapeseed oil (or other frying oil)
  • 1/3 cup water

Recipe

  • 1 cut broccoli, use florets and stems cut into thin rounds.
  • 2 slice mushrooms and onion.
  • 3 slice steak in 1/4 inch think strips.
  • 4 mix hoisin, soya sauce, steak spice and corn starch together in a cup or bowl.
  • 5 heat oil in a large frying pan over med.
  • 6 high heat.
  • 7 add beef and stir fry till brown.
  • 8 remove from pan and set aside.
  • 9 add mushrooms to same pan, cook until just brown.
  • 10 remove from pan, and set aside on top of beef.
  • 11 add onions to pan, stir fry 1-2 minutes.
  • 12 remove from pan and throw on top of mushrooms and beef.
  • 13 add the 1/3 cup of water to fry pan, deglaze.
  • 14 add broccoli to pan and stir fry until water evaporates.
  • 15 returm meat, mushrooms, onion to pan.
  • 16 pour sauce mixture on top.
  • 17 stir constantly, until all is nice and hot and coated evenly with sauce.
  • 18 enjoy over rice or noodles.

Onion Jam

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 3 red onions, peeled and thinly sliced (about 2 pounds)
  • 1 teaspoon dried thyme
  • salt
  • ground black pepper
  • 1 cup red wine
  • 1/4 cup honey
  • 1/4 cup red wine vinegar

Recipe

  • 1 heat the olive oil in a medium skillet over medium heat.
  • 2 add the onions, thyme, and season with salt and pepper to taste.
  • 3 cook, covered, until the onions have wilted, about 10 to 15 minutes, stirring occasionally to prevent sticking.
  • 4 add the red wine and simmer over high heat until most of the wine gets absorbed into the onions.
  • 5 add the honey and red wine vinegar and simmer gently until the onions get jam-like, about 15 minutes.
  • 6 serve with burgers, steak, chicken breasts, etc.
  • 7 store the leftovers in the fridge.

Sauteed Steak Strips With Mushrooms

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 (1 1/2 lb) beef sirloin tip or 1 (1 1/2 lb) top round beef, well-trimmed
  • salt and pepper
  • 3 tablespoons oil
  • 1 lb button mushroom, quartered
  • 1 medium carrot, diced
  • 1/2 medium onion, diced
  • 3 tablespoons dry red wine
  • 1/4 cup beef broth
  • 2 tablespoons cold butter, cut into pieces

Recipe

  • 1 cut the beef into thin, 2 x 1/4-inch strips. season with salt and pepper.
  • 2 heat 2 t of oil in a large, heavy skillet over med-hi heat. add the meat and sear for approximately 1 minute on each side or until just browned. remove from the skillet with a slotted spoon and keep warm.
  • 3 add the remaining 1 t oil to the skillet and heat. add the mushrooms, carrot, and onion and sauté until the mushrooms give up their juice, about 8 minutes.
  • 4 return the beef to the skillet and stir in the wine and broth. continue to sauté until the meat is just done, 1 to 2 minutes for rare. stir in the butter until just melted. season to taste with salt and pepper. serve immediately.

Slow-cooker Vegetable Soup

Total Time: 8 hrs 30 mins Preparation Time: 30 mins Cook Time: 8 hrs

Ingredients

  • Servings: 8
  • 1 lb boneless round steak, cut into 1/2 inch cubes
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 3 cups water
  • 2 medium potatoes, peeled and cubed
  • 2 medium onions, diced
  • 3 stalks celery, sliced
  • 2 carrots, sliced
  • 3 beef bouillon cubes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon pepper
  • 1 1/2 cups frozen mixed vegetables (i used 2 15 oz.cans veg-all)

Recipe

  • 1 in a slow cooker, combine the first 12 ingredients.
  • 2 cover and cook on high for 6 hours.
  • 3 add frozen vegetables or cans of veg-all.
  • 4 cover and cook on high for 2 hours longer or until meat and vegetables are tender.

Humongus Rouladen De Woolfe

Total Time: 6 hrs 30 mins Preparation Time: 30 mins Cook Time: 6 hrs

Ingredients

  • Servings: 6
  • 2 lbs round steaks, 1/3 inch thick (there were 3 steaks roughly 8" by 6)
  • 1/4 lb bacon, diced and frizzled a bit (i used some beef bacon i wanted to try and sprinkled the cooling bits with hickory liquid smoke.)
  • 3 tablespoons softened cream cheese
  • 1 medium yellow onion, fine dice
  • 2 large sweet gherkins, julienne
  • 2 cups beef broth (i used a beef/onion gravy mix and to it added 1 heaping tbs crushed dehydrated shitake mushroom.)
  • salt and pepper
  • the bacon fat, left in the pan after frizzling
  • 4 small rose' potatoes, halved and lightly pre cooked in the microwave (this is just a habit of mine to be sure the spuds are done in the middle.)

Recipe

  • 1 frizzle the bacon, dice the pickles and onion.
  • 2 lay the meat out long way from you and spread the first 1/4 with cream cheese.
  • 3 put one third the bacon on the cream cheese and start rolling.
  • 4 put 1/3 of the pickles and onions next.
  • 5 roll and tie, keep the width under the size of your crockpot.
  • 6 sear the outside in that bacon fat.
  • 7 put the halved potatoes on the bottom of the crockpot.
  • 8 put the rouladen on top of the potatoes.
  • 9 add any leftover onion, bacon, or pickle.
  • 10 pour the gravy/broth over everything in the pot.
  • 11 1hour on high and about 6hours on low.
  • 12 you might want to turn them in the pot after, say, 4 hours or so.
  • 13 remove the rouladen and potatoes.
  • 14 then thicken the gravy to taste with whatever you normally use, i usually use arrowroot for a neutral taste.

Ruth's Chris Steak House Creamed Spinach

Ingredients

  • Servings: 4
  • 6 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped onion
  • 1 bay leaf
  • 1 whole clove
  • 2 cups whole milk
  • 2 (10 ounce) bags ready-to-use fresh spinach

Recipe

  • 1 melt 4 tablespoons butter in heavy medium saucepan over medium heat.
  • 2 add flour and stir until light golden, about 7 minutes.
  • 3 stir in onion, bay leaf and clove.
  • 4 gradually whisk in milk.
  • 5 whisk until mixture boils and thickens, about 10 minutes.
  • 6 reduce heat to low and simmer 5 minutes longer, whisking frequently (sauce will be very thick).
  • 7 remove bay leaf and whole clove.
  • 8 cook spinach in large pot of boiling water just until wilted and tender, about 2 minutes.
  • 9 drain.
  • 10 transfer spinach to bowl filled with ice water to cool.
  • 11 drain well.
  • 12 roll up spinach in kitchen towl and squeeze out as much liquid as possible.
  • 13 transfer spinach to processor and finely chop.
  • 14 add spinach to warm sauce, simmer over low heat until spinach is heated through, stirring often, about 5 minutes.
  • 15 stir in remaining 2 tablespoons of butter.
  • 16 season to taste with salt and pepper and serve.

Hungarian Goulash

Ingredients

  • Servings: 4
  • 2 lbs round steaks, cut in to 1/2 inch cubes (i use beef stew meat)
  • 1 cup chopped onion
  • 1 minced garlic clove
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons paprika
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • 1 (14 1/2 ounce) can tomatoes
  • 1 cup sour cream

Recipe

  • 1 put steak cubes onion, garlic in crock pot.
  • 2 stir in flour and mix to coat meat.
  • 3 add remaining ingredients except sour cream.
  • 4 stir well.
  • 5 cover& cook on low 8-10 hours.
  • 6 add sour cream 30 minutes before serving and stir throughly.
  • 7 you can also cook this on high for 4-5 hours stirring occasionally.
  • 8 serve over hot buttered egg noodles.

National Tortilla Chip And Chili Day Crock / Stove Top

Ingredients

  • 6 slices bacon
  • 3/4 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 4 garlic cloves, minced
  • 2 -4 chipotle chiles in adobo, minced seeds your choice (amount to your heat level)
  • 2 -4 tablespoons adobo sauce (amount to your heat level)
  • 1 lb round steak, cut in to small cubes
  • 2 lbs lean ground beef
  • 3 tablespoons chili powder
  • 2 tablespoons cocoa powder
  • 3 tablespoons oregano
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • hot pepper flakes, to taste
  • 2 teaspoons paprika (sweet,smoked or hot your choice)
  • 16 ounces black-eyed peas, drained and rinsed
  • 16 ounces pinto beans, drained and rinsed

Recipe

  • 1 brown bacon till crisp remove and set aside to cool.
  • 2 in the bacon fat brown ground beef beef cubes along with the with onions.
  • 3 combine beef and onions with remaining ingredients in slow cooker. stir to blend.
  • 4 cover and cook on low for 9 to 11 hours.
  • 5 crumble bacon and stir into chili.
  • 6 add additional oregano, salt, pepper and cayenne to taste if needed.
  • 7 can be served over rice and topped with tortilla chips, salsa, slice jalapenos, sour cream and avocado slices.

  • 2 tablespoons oil
  • 1 cup water
  • 1/2 cup russian salad dressing
  • 3 tablespoons soy sauce
  • 2 bell peppers, any color,sliced
  • 2 onions, chopped

Recipe

  • 1 heat oil and brown meat for about a minute.
  • 2 add the water, russian dressing and soy sauce and simmer for 30 minutes.
  • 3 add peppers and onions and simmer for 10 minutes.
  • 4 serve over rice or noodles.

Sauteed Mushrooms

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 cups evenly sliced mushrooms
  • 3 ounces clarified butter or 3 ounces olive oil or 3 ounces bacon drippings
  • 1 tablespoon minced shallot
  • kosher salt
  • 1 1/2 ounces cognac
  • 2 teaspoons chopped chives
  • fresh ground black pepper

Recipe

  • 1 heat 1 oz of fat in a large heavy bottom saute pan over high heat. a cast-iron skillet works the best.
  • 2 add a handful of sliced mushrooms and stir until just beginning to brown.
  • 3 push these mushrooms out to the sides of the pan. if the pan is dry add additional fat and add a second handful to the center of the pan, careful not to overcrowd the center.
  • 4 continue until all mushrooms are browning in the pan, add chopped shallot and sprinkle with kosher salt.
  • 5 once shallot has softened and mushrooms are done, reduce the heat to medium and deglaze the pan by adding cognac and stirring to coat the mushrooms.
  • 6 add some fresh ground pepper and stir in the chopped chives.
  • 7 serve immediately over steaks or other dishes.

Easy Steak And Cheese Egg Rolls

Ingredients

  • 3 -4 slices steak-ums
  • 1/4 cup sliced onion
  • 1 teaspoon salt
  • 1 egg
  • 1 tablespoon milk
  • 1 cup cheddar cheese
  • egg roll wrap
  • vegetable oil (for deep frying)

Recipe

  • 1 in a frying pan, cook the steak-umm and onion in two tablesspoons of vegetable oil.
  • 2 season with salt and pepper.
  • 3 once cooked, chop up the steak and onion. set aside in bowl.
  • 4 whisk together the milk and egg to form an egg-wash.
  • 5 brush the edges of the wrapper with the egg-wash.
  • 6 place two spoonfuls of the steak and onion in the center of the wrapper.
  • 7 generously sprinkle with cheese.
  • 8 fold according to directions. set aside. fill and fold the other wrappers.

  • 2 lbs round steaks, cut in 1/2 cubes
  • 1 cup onion, chopped
  • 1 garlic clove, minced
  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon paprika
  • 1/4 teaspoon dried thyme, crushed
  • 1 bay leaf
  • 1 (28 ounce) can tomatoes
  • 1 cup sour cream

Recipe

  • 1 coat beef cubes with flour. add olive oil to skillet and brown beef cubes with onion and garlic.
  • 2 transfer to a slow cooker and add remaining ingredients except sour cream. stir well, cover and cook on low for 7-10 hours.
  • 3 add sour cream 30 minutes before serving. serve over hot noodles or rice.
  • 4 can be cooked on high for 5 – 6 hours.
  • 5 i like to cut up the tomatoes – it’s just whatever your personal preferences might be.

Moroccan Beef Kabobs

Ingredients

  • Servings: 6
  • 1 cup chopped parsley
  • 1 cup chopped cilantro
  • 1/4 cup grated onion
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon paprika
  • 1 tablespoon cider vinegar
  • 1 tablespoon ketchup
  • 2 garlic cloves, minced
  • 1 teaspoon minced gingerroot
  • 1 teaspoon thai red chili paste
  • salt and pepper
  • 2 lbs beef top sirloin steaks, cut into 1-inch pieces

Recipe

  • 1 in a large resealable plastic bag, combine the parsley, cilantro, onion, lemon juice, oil, cumin, coriander, paprika, vinegar, ketchup, garlic, ginger, chili paste, salt and pepper; add beef. seal bag and turn to coat; refrigerate for 8 hours or overnight.
  • 2 coat a grill rack with cooking spray before starting grill. drain and discard marinade. thread the beef cubes onto 8 metal or soaked wooden skewers.
  • 3 grill, covered, over medium-hot heat for 9-12 minutes, until meat reaches your desired doneness, turning occasionally.

Lamb Honey Oriental

  • 2 lbs lamb steak
  • 3 tablespoons oil
  • 3 -4 cloves fresh minced garlic
  • 1 envelope french brown gravy mix (about 1/4 cup)
  • 3/4 cup water
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground ginger powder
  • salt and pepper
  • 4 carrots, thinly sliced
  • 1 medium onion, cut in wedges
  • 1 green pepper, cut in 1 inch squares

Recipe

  • 1 cut the lamb in 1" squares; brown in a large skillet, stirring frequently (about 15 minutes).
  • 2 add in the fresh garlic 3 minutes before the 15 minutes is up, stir with the lamb.
  • 3 in a bowl, combine gravy mix, water, honey, soy sauce, vinegar, ginger, salt and pepper.
  • 4 add to skillet; cover and simmer for about 20 minutes.
  • 5 add in carrots, cook 10 minutes.
  • 6 add in onion and green pepper, cook for another 5-10 minutes.
  • 7 serve up with rice.

French Onion Beef Tenderloin

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb beef tenderloin, 1 to 1 1/2 inches thick, trimmed and cut into 4 steaks
  • 1/2 teaspoon minced dried onion
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon fresh ground black pepper
  • 2 tablespoons canola oil, divided
  • 2 large sweet onions, thinly sliced
  • 1/3 cup dry sherry
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 2 teaspoons chopped fresh thyme
  • 4 slices whole-grain baguette, toasted (1/2-inch thick)
  • 1/2 cup shredded swiss cheese

Recipe

  • 1 sprinkle steaks with dried onion, ¼ teaspoon salt and pepper.
  • 2 heat 1 tablespoon oil in a large skillet over medium-high heat.
  • 3 add the steaks and decrease heat to medium.
  • 4 cook, turning once, until desired doneness, 3 to 6 minutes per side for med-rare.
  • 5 transfer the steaks to a plate; tent with foil.
  • 6 position a rack in upper third of oven; preheat broiler.
  • 7 add the remaining 1 tablespoon oil to the pan.
  • 8 add onions and sherry, cover and cook over med-high heat, stirring occasionally, until the onions are tender and golden brown and the liquid has evaporated, 10-12 minutes.

  • 10 add broth, thyme and the remaining ¼ teaspoon salt; cook until bubbling and thickened, about 1 minute more.
  • 11 remove from the heat and return the steaks and any accumulated juice to the pan.
  • 12 pile up some of the onions on top of the steaks.
  • 13 top each steak with a slice of baguette and some cheese.
  • 14 transfer the pan to the oven and broil until the cheese is melted and bubbling, about 2 minutes.
  • 15 serve the steaks with the onions and sauce.

Pescado Viejo (fish Stew)

  • 2 medium onions, chopped
  • 1 green bell pepper, diced
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 1 large red potatoes, cubed
  • 1 (13 3/4 ounce) can beef broth
  • 1/3 cup red wine
  • 1 bay leaf
  • 1 (1 1/2 ounce) package lawry's original style spaghetti sauce mix
  • 3/4 teaspoon lawry's garlic powder, with parsley
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon celery seed
  • 1 lb halibut or 1 lb swordfish steak, rinsed and cubed

Recipe

  • 1 in large pot sauté onion and bell pepper in oil until tender. stir in the remaining ingredients except the fish. bring to a boil; reduce heat cover and simmer for 20 minutes.
  • 2 add fish and simmer 10 to 15 minutes longer or until fish flakes easily with a fork.
  • 3 remove bay leaf and serve.

Onion Beef Stroganoff

Ingredients

  • 1 1/2 lbs round steaks, cut into strips
  • 1 -2 tablespoon vegetable oil
  • 1 (1 1/4 ounce) envelope onion soup mix
  • 10 3/4 ounces condensed cream of potato soup, undiluted
  • 1 1/4 cups milk
  • 4 1/2 ounces sliced mushrooms, drained
  • hot cooked rice or noodles

Recipe

  • 1 in a large skillet over medium heat, cook beef in oil until no longer pink.
  • 2 stir in soup mix, potato soup, milk and mushrooms.
  • 3 cover and simmer for 35-40 minutes until meat is tender.
  • 4 serve over rice or noodles.

Pan-seared Rib-eye Steaks With Goat Cheese, Caper And Sun-dried

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 ounces soft fresh goat cheese, room temperature (such as montrachet)
  • 2 tablespoons butter, room temperature
  • 2 tablespoons sun-dried tomatoes packed in oil, drained and minced
  • 1 tablespoon capers, drained
  • 2 (12 ounce) boneless rib-eye steaks (each about 12 ounces and 1 1/4-inches thick)

Recipe

  • 1 using electric mixer, beat cheese and butter in medium bowl until fluffy. stir in tomatoes and capers. season with salt and pepper. spoon butter onto sheet of plastic wrap, forming 3-inch-long log. wrap and refrigerate until firm. (can be made 3 days ahead. keep refrigerated.).
  • 2 pat steaks dry. heat heavy large nonstick skillet over high heat. sprinkle steaks with salt and pepper. add steaks to hot skillet; cook about 5 minutes per side for medium-rare. transfer to cutting board. tent with foil and let stand 5 minutes.
  • 3 cut steaks across grain into 1/4-inch-thick slices. sprinkle with salt and pepper. divide among plates. using hot sharp knife, cut butter log into 4 rounds. place 1 butter round atop each serving.

Chili-rubbed Rib-eye Steaks With Cilantro Butter

Total Time: 2 hrs 10 mins Preparation Time: 2 hrs Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped cilantro leaf
  • 1 large shallot, minced
  • 1 garlic clove, minced
  • 1 pinch of finely ground black pepper
  • 1/2 cup butter, at room temperature
  • 4 tablespoons good quality chili powder (try ancho or chipotle)
  • 2 tablespoons salt
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 cup olive oil

Recipe

  • 1 at least a few hours and up to 1 month before you plan to cook, make the butter. in a small skillet over medium heat, heat the oil. add the cilantro, shallot, and garlic and cook for 2 to 3 minutes, stirring often, until the shallot is soft. transfer to a bowl and set aside to cool. in a medium bowl, cream the butter with a fork. add the cilantro mixture and blend well. transfer to a 12-x-12-inch sheet of waxed paper and form into a log about 8 inches long in the center of the sheet. if the mixture is too warm to handle, just refrigerate for a couple of minutes until it is ready. roll the butter up in the waxed paper to make a firm log and twist the ends to hold it tight. place in the freezer until firm.
  • 2 one hour before you plan to cook, make the rub. in a small bowl, mix together the chili powder, salt, granulated garlic, onion powder, and smoked paprika. add the oil and mix well. place the steaks on a big platter and brush the wet chili rub evenly on both sides on the steaks. refrigerate until it is time to cook.
  • 3 prepare the grill for cooking over direct medium-high heat. place the steaks directly over the cooking grate. cook for 4 to 5 minutes per side for medium-rare, or to your desired degree of doneness. remove to individual serving plates and top each steak with a couple of thin slices of the butter. let rest for 5 minutes before serving.

  • 3 chop onion and garlic, dice potatoes if you haven't parboiled them.

  • 1 1/2 lbs skirt steaks, cut into 1/4-inch cubes

  • 1 cup dry wine
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 1 cup veal stock
  • 4 tablespoons tomato paste
  • 1/2 cup milk
  • 1 garlic clove, minced
  • 2 ounces pancetta, chopped
  • 1 tablespoon butter
  • 1 cup dried breadcrumbs
  • 3/4 cup parmigiano-reggiano cheese, freshly grated
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon grated nutmeg
  • 2 large eggs
  • salt and pepper

Recipe

  • 1 cover the dried porcini mushrooms with 1 1/2 c of boiling water and allow to sit for 20 minutes. strain through a fine mesh strainer and reserve the liquid. rinse the mushrooms to rid them of any dirt and finely chop.
  • 2 place large heavy bottomed pan over medium heat. add 2 tbl of olive oil and the pancetta. cook for 2 minutes until pancetta starts to brown. add the onion, celery and carrots, cooking for 5 minutes more until the vegetables start to soften. add the ancho pepper, garlic and porcini mushrooms. season with a little salt and cook until vegetables are soft. remove the vegetables and set aside.
  • 3 using the same pan, heat the remaining 2 tbl of olive oil. add the skirt steak and ground lamb. season with salt and black pepper. cook over medium high heat until the meat begins to brown, about 15 minutes. turn the heat down to medium and add the vegetables, wine, bay leaves and thyme. cook until the liquid evaporates and the mixture begins to brown. be sure to scrape the brown glaze off of the bottom of the pan. add 1 cup of the porcini liquid, half of the veal stock and the tomato paste. cook at a slow simmer, partially covered until liquid begins to thicken. the next few steps take 30 - 40 minutes and are what gives the sauce a rich texture and depth of flavor. add milk, 2 tbl at a time, stirring the sauce well to incorporate. continue to cook the sacue gently, adding a few tablespoons of milk when needed. reduce until the sacue begins to brown again. add the remaining porcini liquid an dveal stock, stirring and scraping well. the sauce is done when its texture is velvety and the meat is completely tender, about 1 1/2 hours.
  • 4 to make the gnocchi, combine the garlic, pancetta and butter in the work bowl of a food processor fitted with a steel blade. process until the mixture becomes creamy in texture. in a separate bowl, mix the bread crumbs, flour and 1/2 c of the parmesan cheese. transfer to a work surface and shape into a mound. make a hollow in the center of the mound. put the garlic and pancetta mixture into the hollow and add the nutmeg, eggs and season with salt and black pepper. draw the sides of the mound together and knead until it is well mixed. cut into four equal pieces. lightly flour the work surface. using your hands, roll the gnocchi dough out into long thin trips about 1/2 inch in diameter. then, using a paring knife cut into 1 inch pieces. bring a large pot of salted water to a simmer. add gnocchi and cook until they return to the surface, about 4 minutes. strain through a colander and serve with the bolegnese sauce. sprinkle with the remaining parmesan cheese.

  • 3 lbs sirloin steaks, loin strips (good quality)
  • 1/2 cup ketchup
  • 1/2 cup barbecue sauce
  • 1 cup steak sauce (1/2 emeril's steak sauce and 1/2 a1 preferred)

  • 1 tablespoon hot sauce, to taste (refer to note # 2)
  • 2 tablespoons garlic powder

Recipe

  • 1 cut outer fat from steak and cut into desired sized tips.
  • 2 in a bowl, mix all of the remaining ingredients.
  • 3 place tips in a very large ziplock plastic bag. pour marinade over tips and distribute evenly, moving around the tips so they are completely covered with marinade. close bag tightly removing as much air from bag as possible. place bag in a bowl (this prevents any leaking marinade to get all over your refrigerator).
  • 4 place bowl in refrigerator 4 hours or overnight.
  • 5 remove tips from marinade; reserve remaining marinade.
  • 6 grill tips on a coal or gas grill to desired doness. if cooking indoors, refer to note # 1 below.
  • 7 while your tips are cooking; add remaining marinade into a small saucepan and cook until it comes to a full boil. cook for 2 minutes.
  • 8 serve tips hot and serve with sauce. these are great served with a baked potato or rice. .
  • 9 note 1: on winter days, i've cooked this indoors on a cast iron pan with grill grades. once they are browned evenly, cover with a lid (this helps cook through and not burn). i find that the marinade burns easily using the cast iron method. therefore, add a few drops of water to the pan which keeps the marinade saucy, being careful not to add too much water so that you wont' be steaming instead of grilling.

  • 1 preheat your oven to 350 (for finishing).
  • 2 first brush your rib eyes down with a small amount of olive oil.

  • 5 now take your pan and add a bit of olive oil, and sear your steaks about 3 minutes on each side.
  • 6 transfer seared steaks to a sheet panthe steaks to a sheet pan and finish cooking in a 350 degree oven for around 10 minutes or so to obtain a medium rare steak.
  • 7 reserve a bit of the oil in the skillet that the steaks were seared in, and over medium-high heat saute your shallots until they are nice and browned/glazed (approx 2 1/2 mins).

  • 9 add heavy cream to the skillet and stir in the green peppercorns.

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 large yellow onions, sliced
  • 2 lbs boneless sirloin steaks
  • salt and pepper
  • 1/2 cup bourbon

Recipe

  • 1 in a large skillet, melt 2 tbsp butter with 1 tbsp of olive oil over medium heat.
  • 2 add the onions, and cook, stirring occasionally until golden (about 15 minutes).
  • 3 transfer the onions to a bowl and set aside.
  • 4 season both sides of steak with salt and pepper.
  • 5 add remaining 1 tbsp olive oil to the skillet and fry steak over medium heat turning once until brown - about 6 minutes per side (for medium).
  • 6 transfer steak to serving platter and keep warm.
  • 7 add bourbon to the skillet and over medium heat - scrap up bits that cling to the pan. allow the liquor to simmer and reduce by half (about 1 minute).
  • 8 add the onions and remaining 2 tbsp butter and stir until butter is melted. reduce heat and cook till onions are tender (about 2 minutes). season to taste with any salt and pepper.
  • 9 to serve, cute the steak in 1/4 in thick slices and top with onions.
