Mince 'n' Mint Kebabs

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 250 g ground sausage
  • 250 g minced steak
  • 1 onion, grated
  • 2 cloves garlic, crushed
  • 1 teaspoon fresh lemon rind
  • 1 teaspoon lemon juice
  • 1 teaspoon mixed herbs
  • 1/4 cup parsley, chopped
  • 1/4 cup cooked rice
  • 1 tablespoon tomato paste
  • 1 egg, lightly beaten
  • 1/4 cup mint jelly
  • 1 tablespoon french dressing
  • 2 teaspoons chopped mint or 1/2 teaspoon dried mint leaf

Recipe

  • 1 combine all the ingredients, mix well.
  • 2 shape tablespoonfuls of mixture into flat rolls around the end of 20 soaked wooden skewers.
  • 3 cover, refrigerate 30 min.
  • 4 barbecue until kebabs are browned all over and cooked thoroughly.
  • 5 mint dip: combine jelly and dressing in a pan, stir over low heat until jelly is melted, stir in mint.
