Grilleed Steak With Blue Cheese Butter

Ingredients
- 1/4 cup blue cheese, crumbled (2oz)
- 1/4 cup unsalted butter, softened
- 1 tablespoon chopped fresh parsley
- 4 (12 ounce) new york strip steaks, 1 1/2-inch thick (about 12 oz. each)
- salt and pepper
Recipe
- 1 preheat grill to high.
- 2 combine: blue cheese, butter and parsley in a bowl with a fork. do not overmash. the cheese should remain chunky. set aside until ready to serve.
- 3 pat steaks dry with paper towels, then season both sides with salt and pepper.
- 4 grill steaks, covered, on both sides to desited doneness (about 5 minute per side for med-rare).
- 5 remove from grill, tent with foil, and allow to rest 5 minute serve with dollop of blue cheese butter.
