Roast Prime Rib

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • 12 -14 lbs choice rib eye
  • 3 tablespoons chef joes steak spice (www.chefjoesrubs.com)
  • 2 tablespoons extra virgin olive oil
  • 4 cups water

Recipe

  • 1 preheat oven to 400.
  • 2 drizzle the ribeye with olive oil.
  • 3 sprinkle the steak spice evenely on rib.
  • 4 rub the spice all around the rib.
  • 5 cook the rib for 30 minutes on 400 then turn it down to 325 for 45 minutes, this should be a rare piece of rib, using a thermometer, finish cooking til desired temp --
  • 6 rare= 100-110.
  • 7 medium rare=115-125.
  • 8 medium=130-140.
  • 9 medium well=140 and up.
  • 10 when done, let it sit for 15 minutes, remove from pan.
  • 11 drain grease from pan. add the water to pan and place on stove top burner on high heat. using a spoon or wisk, deglaze the pan (scrape all the sides, bottom etc.) this makes the au jus(pot licker). bring to a boil, simmer for a bit and use this as the gravy for the rib. salt and pepper to taste.
  • 12 and done!
