Leftover Prime Rib Hash

Ingredients
- Servings: 3
- 1/2 large sweet potato, diced
- 1/2 large onion, diced
- 5 mushrooms, diced
- 1 cup cauliflower floret, diced
- 1 cup prime rib roast, diced
- 1 tablespoon oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon mccormick steak seasoning
- 1 tablespoon chopped chives
Recipe
- 1 poke holes in sweet potato and microwave for ~6-8 minutes to soften. when sweet potato is softened, remove from microwave and let cool.
- 2 peel and dice half of the cooled sweet potato. dice up the rest of the vegetables.
- 3 add oil and heat pan to med-high heat.
- 4 add onions to pan and saute until browned.
- 5 add rest of vegetables, salt, and pepper. cover pan to help soften cauliflower. stir intermittently to ensure even heating.
- 6 when cauliflower is softened, uncover pan and mix in prime rib and steak seasoning. flatten into an even layer and cook until crispy on bottom.
- 7 flip hash in sections until crispy on other side.
- 8 remove from heat and serve.
- 9 optional: top with chives for added color when serving.
