Provencal Steak And Veggies

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 (1 lb) beef sirloin steak, cut into 1 inch cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 yellow squash, cut unto 1 inch chunks
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1/4 teaspoon black pepper
  • 2 cups loosely packed fresh spinach leaves
  • 1 tablespoon grated parmesan cheese (or more)

Recipe

  • 1 in a large skillet, heat oil over high heat.
  • 2 add steak, onion, and garlic.
  • 3 saute 5 minutes, or until meat is browned, stirring frequently.
  • 4 add yellow squash and saute 3 to 4 minutes, stirring frequently.
  • 5 add beans, tomatoes, and black pepper, mix well.
  • 6 cook 3 to 4 minutes, or until heated through.
  • 7 just beore serving, stir in spinach and cook 2 to 3 minutes, or until spinach wilts.
  • 8 sprinkle with paresan cheese and serve.
