Lamb And Rice Creole

Ingredients

  • 4 lamb steaks
  • 3/4 cup diced green pepper
  • 1/2 cup chopped onion
  • 1 (28 ounce) can tomatoes
  • 2/3 cup rice
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon chili powder (to taste)
  • 1 cup water
  • oil (for frying)

Recipe

  • 1 brown the meat on both sides in a heavy skillet. remove steaks from the pan and pour off half the fat. saute peppers and onions in the fat. add tomatoes, rice, salt, pepper, and chili powder. add the water and the steaks. cover and simmer slowly until tender, about 1 1/2 hours. stir occasionally.
