Lamb With A Cheese Crust

Ingredients

- 4 lamb loin steaks
- 3 ounces cheddar cheese, grated
- 2 ounces fresh breadcrumbs
- 2 ounces pecan halves, chopped
- 1 green apple, peeled, cored and grated
- 2 tablespoons flat leaf parsley, chopped
- fresh ground black pepper
Recipe
- 1 broil the chops or steaks for approximately 15 minutes, turning occasionally until cooked through.
- 2 mix together the cheese, breadcrumbs, nuts, apple, most of the parsley and season to taste.
- 3 divide the mixture into 4 and press 1 portion on top of each chop or steak. return to the broiler until golden and then serve sprinkled with the remaining chopped parsley.
