Minty Peach Halibut

Ingredients
- Servings: 4
- 1 (10 ounce) jar peach preserves
- 2 teaspoons minced fresh mint
- 4 (6 ounce) halibut steaks
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 in a small saucepan, bring preserves and mint to a boil.
- 2 cook and stir for 2 minutes.
- 3 remove from the heat; set aside.
- 4 sprinkle fish with salt and pepper.
- 5 place on a greased broiler pan.
- 6 broil 4 inches from the heat for 5 minutes.
- 7 spoon half of the peach mixture over fish.
- 8 broil 1 minute longer; turn.
- 9 broil 3-4 minutes more or until fish flakes easily with a fork.
- 10 basing once with remaining peach mixture.
