Minty Peach Halibut

Ingredients

  • Servings: 4
  • 1 (10 ounce) jar peach preserves
  • 2 teaspoons minced fresh mint
  • 4 (6 ounce) halibut steaks
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 in a small saucepan, bring preserves and mint to a boil.
  • 2 cook and stir for 2 minutes.
  • 3 remove from the heat; set aside.
  • 4 sprinkle fish with salt and pepper.
  • 5 place on a greased broiler pan.
  • 6 broil 4 inches from the heat for 5 minutes.
  • 7 spoon half of the peach mixture over fish.
  • 8 broil 1 minute longer; turn.
  • 9 broil 3-4 minutes more or until fish flakes easily with a fork.
  • 10 basing once with remaining peach mixture.
