- 1 tablespoon black peppercorns
- 6 garlic cloves (large)
- 1 pinch salt
- 4 tablespoons red wine vinegar
- 600 g beef, skirt (trimmed)
Recipe
- 1 in a pestle and mortar crush the peppercorns, garlic and salt to make a smoothish paste, stir in the vinegar. sit the beef in a non metallic dish and rub with paste. leave in fridge for 2-3 hours.
- 2 place a griddle pan on very high heat, rub the marinade off the meat and season again with salt. cook meat until slightly charred about 5 min per side.
- 3 transfer into the oven gas mark 7 fro 5 minutes, allow to rest for 5 minutes then crave and serve with salad and chips.
