Garlic-lemon Salmon-potato Bake

Ingredients

- 2 salmon steaks, 1 inch thick
- 2 large red potatoes
- olive oil flavored cooking spray
- 1 teaspoon capers, drained
- 2 cups mixed baby greens
- 1 teaspoon fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 3 garlic cloves
- pepper
Recipe
- 1 in a mini-processor, puree marinade contents.
- 2 pour marinade over steaks & marinate in refrigerator 1/2 hour.
- 3 meanwhile, boil potatoes just until al dente & slice thin.
- 4 spray a baking dish with olive oil spray.
- 5 place sliced potatoes in baking dish and sprinkle a small amount of the marinade over them.
- 6 top with salmon steaks.
- 7 pour the rest of the marinade over the steaks and scatter the capers over the whole dish.
- 8 bake at 400f 10 minutes and test for doneness--when cut into, flesh should be opaque but not yet flaking. if necessary, bake longer, testing every couple minutes; it should not take longer than 15 minutes.
- 9 place a bed of greens on each of two dinner plates, place half the potatoes and a salmon steak on each bed of greens, dribble any marinade left in pan over the top and sprinkle with parsley.
