Low Carb Salsa/lime Chicken

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 3 tablespoons olive oil
  • 4 boneless skinless chicken breasts
  • 1 cup salsa
  • 4 garlic cloves
  • 10 tablespoons ranch dressing
  • 1/8 cup lime juice
  • 1 1/2 cups shredded cheddar cheese

Recipe

  • 1 slice chicken breast in half making 8 thin steaks. brown chicken breasts in olive oil. add garlic. sauté for about 2 minutes. mix salsa, ranch dressing and lime juice together. pour over chicken. top with cheese. lower heat to low/medium cover and simmer until tender (about 15 minutes depending on altitude).
