Mozzarella With Mediterranean Salsa

Ingredients

- 9 ounces mozzarella cheese, finely sliced
- 1 beefsteak tomato, finely sliced
- 1 zucchini, finely diced
- 1 small eggplant, finely diced
- 1 ounce black olives, pitted, finely diced
- 3 tablespoons italian salad dressing
- 1 tablespoon pesto sauce
- black pepper
Recipe
- 1 arrange the mozzarella and tomato slices onto individual serving plates.
- 2 blanch and refresh the zucchini and eggplant, then combine with the black olives.
- 3 pile spoonfuls into the centre of each plate, mix together the dressing and pesto then drizzle over the salad. season with plenty of black pepper.
- 4 serve immediately.
