Mozzarella With Mediterranean Salsa

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 9 ounces mozzarella cheese, finely sliced
  • 1 beefsteak tomato, finely sliced
  • 1 zucchini, finely diced
  • 1 small eggplant, finely diced
  • 1 ounce black olives, pitted, finely diced
  • 3 tablespoons italian salad dressing
  • 1 tablespoon pesto sauce
  • black pepper

Recipe

  • 1 arrange the mozzarella and tomato slices onto individual serving plates.
  • 2 blanch and refresh the zucchini and eggplant, then combine with the black olives.
  • 3 pile spoonfuls into the centre of each plate, mix together the dressing and pesto then drizzle over the salad. season with plenty of black pepper.
  • 4 serve immediately.
