Pepper Steak And Rice

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb boneless round steak
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 medium green pepper, cut into strips
  • 1 large onion, cut into rings
  • 1/2 cup chopped celery
  • 1 (4 ounce) can sliced mushrooms, undrained
  • 1/4 cup soy sauce
  • pepper
  • 3 tablespoons water
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • hot cooked rice

Recipe

  • 1 trim excess fat from steak.
  • 2 slice across the grain into 2 x 1/4-inch strips.
  • 3 melt butter in a large skillet.
  • 4 saute green pepper, onion and celery in butter.
  • 5 remove vegetables, reserving drippings in skillet.
  • 6 brown steak in reserved drippings.
  • 7 add sauteed vegetables, mushrooms, soy sauce, pepper and 3 tablespoons water; cover and simmer 30 minutes or until meat is tender.
  • 8 remove meat and vegetables and reserve the drippings in skillet.
  • 9 combine cornstarch and 1 tablespoon water, stirring until cornstarch is disolved.
  • 10 add cornstarch mixture to liquid in skillet; cook, stirring constantly, until smooth and thickened.
  • 11 return meat and vegetables to skillet.
  • 12 serve over rice.
