Peppered Flank Steak And Salsa

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon ground red pepper
  • 1 (1 lb) flank steak, trimmed
  • 1 1/2 cups diced red and yellow tomatoes
  • 2 tablespoons diced green onions
  • 4 tablespoons chopped fresh oregano
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Recipe

  • 1 preheat grill to medium-high heat.
  • 2 combine the first 6 ingredients in a small bowl, and mix.
  • 3 rub spice mixture over both sides of steak.
  • 4 place steak on a grill, and grill 6 minutes on each side or until desired degree of doneness.
  • 5 let stand for 5 minutes.
  • 6 cut steak diagonally across grain into thin slices.
  • 7 combine diced tomatoes and remaining ingredients .
