Mexicali Round Steak

Total Time: 9 hrs 10 mins Preparation Time: 10 mins Cook Time: 9 hrs

Ingredients

  • Servings: 6
  • 1 1/2 lbs round steaks, trimmed of fat
  • 1 cup frozen corn
  • 1/2-1 cup fresh cilantro, chopped,to taste
  • 1/2 cup fat free low-sodium beef broth
  • 3 stalks celery, sliced
  • 1 large onion, sliced
  • 1 (20 ounce) jar salsa
  • 1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 cup fat-free cheddar cheese
  • cooked rice

Recipe

  • 1 cut beef into 6 pieces.
  • 2 place in slow cooker.
  • 3 combine remaining ingredients, except cheese, and pour over beef.
  • 4 cover and cook on low for 8 to 9 hours.
  • 5 sprinkle with cheese before serving.
