Mexicali Round Steak

Ingredients

- 1 1/2 lbs round steaks, trimmed of fat
- 1 cup frozen corn
- 1/2-1 cup fresh cilantro, chopped,to taste
- 1/2 cup fat free low-sodium beef broth
- 3 stalks celery, sliced
- 1 large onion, sliced
- 1 (20 ounce) jar salsa
- 1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans, rinsed and drained
- 1 cup fat-free cheddar cheese
- cooked rice
Recipe
- 1 cut beef into 6 pieces.
- 2 place in slow cooker.
- 3 combine remaining ingredients, except cheese, and pour over beef.
- 4 cover and cook on low for 8 to 9 hours.
- 5 sprinkle with cheese before serving.
- 6 serve vegetables over cooked rice.
