Recipe -- Herb Cured Tuna

Total Time: 48 hrs 10 mins Preparation Time: 10 mins Cook Time: 48 hrs

Ingredients

  • 6 jalapenos
  • 1 bunch basil (chopped)
  • 1 bunch cilantro (chopped)
  • 2 tablespoons cracked peppercorns
  • 1/2 cup vodka
  • 18 ounces tuna steaks
  • 10 ounces kosher salt
  • 12 ounces sugar
  • 2 tablespoons peppercorns (cracked)

Recipe

  • 1 puree marinade ingredients(first 5) in food processor until a paste is achieved.
  • 2 marinate tuna steaks for 24 hours.
  • 3 remove tuna from marinade and place in cure for 24 hours. (the salt, sugar, and pepper).
  • 4 remove tuna from cure after 24 hours and brush off salt etc.
  • 5 wrap individually with plastic wrap.
  • 6 will keep for 1 week refrigerated.
  • 7 serving ideas:.
  • 8 garnishes: carrots & daikon very finely shredded, long & thin - pickled ginger - hard cooked egg, quartered - tomato concasse - sliced red onions - capers - black bread.
