Recipe -- Herb Cured Tuna

Ingredients
- 6 jalapenos
- 1 bunch basil (chopped)
- 1 bunch cilantro (chopped)
- 2 tablespoons cracked peppercorns
- 1/2 cup vodka
- 18 ounces tuna steaks
- 10 ounces kosher salt
- 12 ounces sugar
- 2 tablespoons peppercorns (cracked)
Recipe
- 1 puree marinade ingredients(first 5) in food processor until a paste is achieved.
- 2 marinate tuna steaks for 24 hours.
- 3 remove tuna from marinade and place in cure for 24 hours. (the salt, sugar, and pepper).
- 4 remove tuna from cure after 24 hours and brush off salt etc.
- 5 wrap individually with plastic wrap.
- 6 will keep for 1 week refrigerated.
- 7 serving ideas:.
- 8 garnishes: carrots & daikon very finely shredded, long & thin - pickled ginger - hard cooked egg, quartered - tomato concasse - sliced red onions - capers - black bread.
