Dijon Beef With Brown Rice Spirals

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons olive oil (divided)
  • 1 small onion, chopped
  • 1 lb top round steak, cut into bite sized pieces
  • 1 1/2 tablespoons bob's red mill gluten-free all-purpose baking flour
  • 2 cups beef broth
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon country-style dijon mustard
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1/2 teaspoon rosemary, crushed
  • salt & pepper

Recipe

  • 1 heat 1/2 tablespoon olive oil in a large pot.
  • 2 add onions and cook for 5 minutes.
  • 3 while onions are cooking, toss beef with flour.
  • 4 add 1 tablespoon olive oil to the pot.
  • 5 increase heat to medium-high.
  • 6 add beef and cook until brown on all sides.
  • 7 while beef & onions are cooking, mix broth, worcestershire, and mustard.
  • 8 reduce heat to low.
  • 9 add broth mixture and stir thoroughly.
  • 10 cover and simmer for 15 minutes or until beef is cooked through.
  • 11 add rosemary, salt, and pepper.
  • 12 dissolve cornstarch in water and add to pot.
  • 13 cook and stir for 3 minutes or until desired thickness is reached.
  • 14 serve over brown rice spirals.
