Low-cal Citrus Baked Lamb

Ingredients

- 2 tablespoons olive oil
- 2 (400 g) packages thin-cut lean lamb loin steaks
- 1 lemon, thinly sliced
- 6 tablespoons fresh thyme leaves
- 150 ml wine
- 150 ml rich lamb stock
Recipe
- 1 preheat the oven to 200°c.
- 2 heat 1 tbsp olive oil in a large frying pan.
- 3 cook the lamb steaks in batches over a high heat for 1 minute on each side until lightly browned.
- 4 remove from frying pan.
- 5 drain on kitchen paper.
- 6 arrange lamb steaks, lemon and lime slices and thyme leaves in a shallow, ovenproof dish.
- 7 drizzle the remaining olive oil, season generously.
- 8 mix the wine and stock.
- 9 pour into the dish.
- 10 bake uncovered for 20-25 minutes.
- 11 when the lamb is tender and cooked through.
- 12 serve with mashed potatoes and seasonal vegetables, or salad if preferred.
