Low-cal Citrus Baked Lamb

Total Time: 38 mins Preparation Time: 8 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 2 (400 g) packages thin-cut lean lamb loin steaks
  • 1 lemon, thinly sliced
  • 6 tablespoons fresh thyme leaves
  • 150 ml wine
  • 150 ml rich lamb stock

Recipe

  • 1 preheat the oven to 200°c.
  • 2 heat 1 tbsp olive oil in a large frying pan.
  • 3 cook the lamb steaks in batches over a high heat for 1 minute on each side until lightly browned.
  • 4 remove from frying pan.
  • 5 drain on kitchen paper.
  • 6 arrange lamb steaks, lemon and lime slices and thyme leaves in a shallow, ovenproof dish.
  • 7 drizzle the remaining olive oil, season generously.
  • 8 mix the wine and stock.
  • 9 pour into the dish.
  • 10 bake uncovered for 20-25 minutes.
  • 11 when the lamb is tender and cooked through.
  • 12 serve with mashed potatoes and seasonal vegetables, or salad if preferred.
